Method
 

Preparation
  1. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well integrated.
  2. In another bowl, mix the milk, egg, and vanilla extract until smooth.
  3. Gently fold the wet mixture into the dry ingredients, taking care not to overmix.
Cooking
  1. Heat vegetable oil in a deep fryer or a heavy pot to reach 350°F (175°C).
  2. Carefully drop dollops of batter into the hot oil, frying them for about 2-3 minutes, turning as necessary until golden brown.
  3. Use a slotted spoon to lift the beignets from the oil and allow them to drain on paper towels.
  4. Generously dust beignets with powdered sugar right before serving.

Notes

For extra crispy exterior, ensure oil is hot enough. You can add citrus zest for a refreshing twist or use a cookie scoop for uniformity.
