Preparation
- In a small saucepan, combine the chopped strawberries, granulated sugar (or honey), lemon juice, cornstarch, and vanilla extract. Cook over medium heat, stirring occasionally. Once it reaches a simmer and thickens (about 5-7 minutes), remove it from the heat and let it cool.
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a large mixing bowl, combine the oats, flour, brown sugar, baking powder, salt, and optional ground cinnamon.
- Add the cold butter cubes and blend into the dry ingredients until the mixture resembles coarse crumbs.
- Mix in the vanilla extract and honey or maple syrup if desired.
- Press about 2/3 of the crumble mixture into the bottom of your prepared baking pan to form the base.
- Spoon the cooled strawberry filling over the oatmeal base, spreading it evenly.
- Sprinkle the remaining crumble mixture over the strawberry filling and press gently.
Baking
- Bake in the preheated oven for 35-40 minutes, until the top is golden brown and the filling is bubbling.
- Allow the bars to cool completely in the pan on a wire rack. Once cooled, slice into squares or rectangles.
Notes
These bars are delicious warm or at room temperature! Serve with vanilla ice cream or whipped cream for a special treat. Store in an airtight container at room temperature for up to three days or freeze for longer storage.
