Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together pancake mix, protein powder, baking powder, and sugar, if using.
- In a separate bowl, combine the milk and egg, whisking until smooth.
- Pour the wet ingredients into the dry mixture. Stir gently until just combined; do not overmix.
- Lightly grease an oven-safe bowl or ramekin with cooking spray or oil.
- Carefully pour the batter into the prepared bowl.
Baking
- Bake for 15-20 minutes, until the top is golden and a toothpick inserted comes out clean.
- Allow to cool slightly before diving in!
Notes
Once baked, top with fresh fruits, yogurt, or nuts for added flavor. Store in an airtight container in the fridge for up to three days or freeze for longer storage.
