Ingredients

Main ingredients
  • 1 lb chicken breast, cut into cubes
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (jasmine or basmati)
  • 2 cups chicken broth Can be substituted with vegetable broth for a vegetarian option
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • optional green onions for garnish

Method

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in the chicken cubes, seasoned with salt and pepper, and cook until browned, approximately 5-7 minutes.
  4. Stir in the rice, chicken broth, soy sauce, and pineapple chunks, ensuring everything is well combined.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork, garnish with optional green onions, and serve warm.

Notes

Consider creating a tropical-themed dinner with fresh salad or steamed vegetables. Leftovers can be stored in an airtight container in the fridge for 3-4 days, or frozen for up to three months. Marinating the chicken beforehand can enhance its flavor.
