Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure your butter is softened to room temperature for easy mixing.
For the filling
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice Fresh lemon juice is recommended for the best flavor.
  • 1 tablespoon lemon zest Fresh lemon zest will give the best flavor.
  • 1/2 teaspoon baking powder
For topping
  • 1/4 cup granulated sugar (for topping)
  • to taste powdered sugar (for dusting)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the crumb mixture evenly into the bottom of your prepared baking dish to form the crust.
Filling
  1. In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  2. Pour the lemon mixture over the crust in the baking dish.
Baking
  1. Bake for 20-25 minutes, or until the filling is set.
  2. Once baked, allow to cool, then sprinkle with powdered sugar before cutting into bars and serving.

Notes

These bars can be served fresh out of the baking dish or sliced into neat squares. For variations, consider adding poppy seeds to the lemon mixture, drizzling a lemon glaze, or incorporating fresh blueberries into the filling. Store in an airtight container for up to three days or refrigerate for a week.
