Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a mixing bowl, combine flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.
- Press the crumb mixture evenly into the bottom of your prepared baking dish to form the crust.
Filling
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon mixture over the crust in the baking dish.
Baking
- Bake for 20-25 minutes, or until the filling is set.
- Once baked, allow to cool, then sprinkle with powdered sugar before cutting into bars and serving.
Notes
These bars can be served fresh out of the baking dish or sliced into neat squares. For variations, consider adding poppy seeds to the lemon mixture, drizzling a lemon glaze, or incorporating fresh blueberries into the filling. Store in an airtight container for up to three days or refrigerate for a week.
