Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
For the filling
  • 2 cups sweetened condensed milk
  • 3/4 cup key lime juice Regular lime juice can be substituted.
  • 1 tablespoon lime zest
  • 3 large egg yolks
For serving
  • Whipped cream For topping
  • Lime slices For garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well blended. Press this mixture firmly into the bottom of a greased baking dish.
  3. In another bowl, whisk together the sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth and creamy.
  4. Pour the lime filling over the prepared crust, spreading it evenly with a spatula.
  5. Bake in the preheated oven for about 15-20 minutes, or until set and no longer jiggly in the center.
Cooling and Serving
  1. Let the bars cool to room temperature.
  2. Once cooled, refrigerate them for at least 2 hours for proper setting.
  3. Cut into bars, enhance with a dollop of whipped cream, and garnish with fresh lime slices before serving.

Notes

Key lime pie bars are best enjoyed chilled and can be served with fresh fruit or coconut sorbet. They also freeze well for longer storage.
