  • 4 slices Bread You can use gluten-free bread as a substitute.
  • 1 cup Baked Beans (Canned or Homemade) Consider homemade spiced baked beans for flavor.
  • 1 tbsp Oil Used for frying the sausages and vegetables.
  • 1 tbsp Butter For frying the eggs.
  • 4 links Chicken Sausages Feel free to substitute with pork or vegetarian sausages.
  • 2 medium Tomatoes Halved for cooking.
  • 8 whole Mushrooms Left whole for frying.
  • 4 large Eggs Cook to your preferred doneness.
  • Salt To taste.
  • Black pepper To taste.
  • 2 pieces Spring onions Chopped for garnish.

Method
 

Preparation
  1. Prepare the baked beans. If you’re feeling adventurous, whip up a batch of homemade spiced baked beans. Otherwise, open a can and set them aside.
  2. Slice the bread and toast it with a little butter until crispy. Once done, set it aside for serving later.
Cooking
  1. In a large frying pan, heat the oil over medium to low heat. Add the chicken sausages, halved tomatoes, and whole mushrooms.
  2. Cook everything, tossing occasionally, until the sausages are seared to perfection, and the vegetables are nicely charred. Once done, set them aside in the pan.
  3. In the same pan, melt the butter. Crack a couple of eggs in, season with salt and pepper, and cook them to your liking—sunny-side up or over-easy are both great choices.
Plating
  1. Arrange the sausages, fried eggs, grilled mushrooms, tomatoes, toast, and a generous round of baked beans on your plate.
  2. Sprinkle with chopped spring onions for a fresh finish. Serve immediately while everything is hot and fragrant.

Notes

Consider serving it with a side of freshly squeezed orange juice or a warm cup of English breakfast tea for a truly authentic experience. For leftovers, allow them to cool before storing in airtight containers, and consume within 2-3 days.
