Ingredients
  

Pancake Batter
  • 1 1/4 cup milk regular or plant-based
  • 2 tbsp maple syrup
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour regular or gluten-free
  • 3 tsp cinnamon
Cinnamon Swirl
  • 4 tbsp softened butter regular or plant-based
  • 1/2 cup brown sugar or coconut sugar
  • 1 tbsp cinnamon
Cream Cheese Drizzle
  • 2 tbsp melted butter regular or plant-based
  • 2 oz cream cheese regular or plant-based
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. In a bowl, mix the flour, baking powder, cinnamon, and salt.
  2. In another bowl, combine milk, maple syrup, and vanilla extract. Whisk until smooth.
  3. Gradually add the wet mixture to the dry ingredients. Stir until just combined.
  4. In a separate bowl, blend softened butter, brown sugar, and a tablespoon of cinnamon to create the cinnamon swirl.
Cooking
  1. Heat a skillet over medium heat and grease lightly.
  2. Pour about 1/4 cup of pancake batter onto the skillet. Create a swirl on top with the cinnamon mixture.
  3. Flip when bubbles form on the surface, cooking the other side until golden brown.
Serving
  1. In a small bowl, mix together melted butter and cream cheese for a drizzle. Add powdered sugar for sweetness.
  2. Serve pancakes warm, drizzled with cream cheese icing.

Notes

To ensure pancakes are fluffy, avoid overmixing the batter, and preheat the skillet properly. For variations, add nutmeg or chocolate chips.
