  • 1 can (15-ounce/425g) chickpeas, drained and rinsed
  • 1 medium avocado, pitted and diced
  • 4 ounces feta cheese, crumbled
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • to taste salt and pepper

Preparation
  1. In a large bowl, combine your rinsed chickpeas, diced avocado, crumbled feta, thinly sliced red onion, along with parsley and mint.
  2. In a separate bowl or jar, whisk together olive oil, freshly squeezed lemon juice, minced garlic, and dried oregano. Add salt and pepper to taste for an extra kick.
  3. Drizzle the zesty dressing over your salad ingredients. Gently toss everything together until well combined to allow the flavors to mingle.
  4. For optimal taste, serve immediately or let it chill in the refrigerator for about 30 minutes to enhance the flavors even more.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days, but best enjoyed fresh. Avoid freezing this dish due to the avocado.
