  1. In a large skillet, heat the olive oil or butter over medium heat.
  2. Add the diced potatoes. Cook until they’re golden brown and crispy, roughly 10-15 minutes, stirring occasionally.
  3. If using, stir in the diced ham or bacon and allow it to heat through.
  4. In a separate bowl, whisk together the eggs with salt and pepper before pouring them over the cooked potatoes in the skillet.
  5. Gently stir the mixture to scramble the eggs with the potatoes and any meat until fully cooked.
  6. Sprinkle the shredded cheddar cheese on top, cover the skillet, and let it sit for about a minute to melt the cheese.
  7. If desired, sprinkle chopped green onions on top before serving warm.

Notes

For extra crispy potatoes, soak the diced potatoes in cold water for 30 minutes before cooking. Experiment with spices like paprika or garlic powder for enhanced flavor. Mix different cheeses for a richer taste.
